Learn how to stretch a Cookie dough three ways
Basic Cookie Recipe
1 Cup butter (8 ozs) – 226gm
1 Cup sugar
1 egg
2 tsp vanilla
2¾ C flour
½ tsp. salt
½ tsp. baking powder
Cream butter and sugar in an electric mixer. Alternatively, use a spatula to beat together. Mix in egg and vanilla. Sift together flour, salt and baking powder and stir into batter, mixing thoroughly. The dough should come together in a ball.
Sugar Cookie
Roll out the dough into thin, flat disc. Use cookie cutters to cut out a variety of shapes and bake on a baking sheet at 180 degrees Celcius for 10-13 minutes. When cool, decorate with icing, sprinkles, etc.
Thumbprints
Roll the dough into individual balls about 1.5 to 2 inches in diameter. Place balls about 2 inches on a baking sheet then press down with your thumb to make a well in the middle. Fill crater with your favourite jam or fruit preserve and bake at 180 degrees Celcius for 11-14 minutes.
Chocolate Bars
Stir in dried cranberries into the dough. Press the entire ball onto a 9×13-inch pan. Bake at 180 degrees Celcius for 15 minutes. When the top is golden, remove from the oven and sprinkle chocolate chip cookies. Wait a minute and spread chocolate into a smooth layer. Cut into square and cool completely before serving.
