Granola Bars

Learn how to make Granola Bars!

75gm butter

½ cup brown sugar

½ cup honey

½ cup peanut butter (*if omitting for allergies, increase honey to ¾ cup)

1 teaspoon vanilla

½ teaspoon salt

1 teaspoon cinnamon powder

½ cup flour (*even healthier if replaced with wheat germ)

2 cups old fashioned rolled oats

1 cup shredded/desiccated coconut

2 Cups of mix-ins (any combination of chocolate chips, nuts, pumpkin/sunflower seeds or dried fruit e.g. cranberries, raisins, dates, apricots, cherries)

1 saucepan

1 mixing bowl

1 baking tray/casserole dish

parchment/baking/wax paper

Line a baking tray or dish with parchment paper.  In a mixing bowl, toss together flour, oats, coconut and mix-ins until thoroughly combined.

Heat the butter in a saucepan, then add, sugar, honey, peanut butter, vanilla, salt and cinnamon powder.  Stir until sugar is dissolved and mixture is hot but not boiling.

Mix into dried ingredients.  Transfer mixture into lined baking tray. Lightly press together into a thin layer.

Bake in a preheated oven at 180 degrees Celcius for 20-25 until light golden.  Remove from oven.  While warm, cut into squares or long bars (they’ll get too brittle once cooled).
